DENVER – March 2010 – The Easter Bunny will soon come hop, hop, hoping into your home and community. As Easter approaches, the Colorado Egg Producers (CEP) Association hopp-ily wants to remind Coloradans that just like there are a variety of ways to eat eggs, there are a variety of ways to decorate eggs.

CEP is a membership organization representing seven family farms throughout Colorado. CEP is committed to doing what’s right for its community, as illustrated by their regular donation of thousands of eggs to food banks throughout the state. Colorado egg farmers throughout Colorado pride themselves on providing eggs, a high quality, protein-dense food, to Coloradans. We are also proud to offer consumers the choice between cage, cage-free eggs, organic, nutrient enhanced, brown and white eggs.

“Eggs are the traditional centerpiece of Easter,” said Clint Hickman, a Colorado egg farmer with Colorado Egg, LLC near Grand Junction. “It’s a great time to get creative and it all begins with decorating your eggs. This year we are proud to offer you some tricks of the trade straight from the egg-sperts.”

This Easter make sure your eggs are perfectly hard-boiled and ready for decorating, hiding and of course eating. Courtesy of the American Egg Board, here are step-by-step directions to make the perfect hard-boiled eggs:

Step 1: Place the eggs in a saucepan large enough to hold them in a single layer. Add cold water to covering the eggs by one inch. Heat on high and bring to a boil.

Step 2: Remove from the burner and cover the pan. Let the eggs stand in hot water. (Twelve minutes for medium eggs, 15 minutes for large eggs and 18 minutes for extra large eggs. The time may be have to adjusted by a minute or two at high-altitude as boiling takes longer)

Step 3: Drain immediately and cool completely under cold running water or in a bowl of ice water, then refrigerate.

Tips:

  • Never over-cook eggs. It makes them rubbery and turns the yolks green due to a reaction between iron in the yolk and sulfur in the white.
  • Use older eggs because they peel more easily. Buy and refrigerate them a week to 10 days in advance of cooking. This brief "breather" allows the eggs time to take in air, which helps separate the membranes from the shell.

Once you have the perfect hard-boiled eggs, it is time to decorate. Break the mold when decorating your eggs this year and have an eggs-traordinary time in the process. Switch from conventional egg dye to coloring right on your hard-boiled eggs with crayons. Here are easy to follow instructions:

  1. Add vinegar to the water when hard-boiling your eggs. Use about 1 1/2 tablespoons of vinegar for every cup of water.
  2. Carefully remove a hot egg (parents only) and cool for about 10 minutes under cold water. (Leave the others in the water until you're almost ready to decorate them, so they stay warm.)
  3. Holding the egg on a paper towel, draw on the shell with the crayons. Let the design set for about 30 minutes.
