Each month, the Colorado Department of Agriculture features a different commodity to highlight the variety and quality of products grown, raised or processed in the state. This month, Colorado eggs are featured in our Breakfast Egg Tacos recipe.

Colorado's 3.8 million chickens produce more than one billion eggs every year. When selecting eggs, shell and yolk color may vary, but color does not affect egg quality, flavor, nutritive value, cooking characteristics or shell thickness. Protein-rich and lower in cholesterol than previously thought, eggs contain vitamins and minerals such as folate, choline and Vitamins A, B12 and D. Look for Colorado eggs at local grocery stores and at restaurants across the state.

According to the Colorado Egg Producers (CEP) Association this advice is true, especially if your breakfast includes eggs. Many of us skip breakfast because we feel crunched for time, but it is important to remember that breakfast is essential to jump starting our bodies and brains and helps us meet our full potential each day. CEP is here to remind you that eggs are an easy, healthy and fast breakfast choice that will help you stay energized all day.

CEP is a membership organization representing seven family farms throughout the state. CEP is committed to doing what’s right for its community, as illustrated by the regular donation of thousands of eggs to food banks throughout the state. Local egg farmers take great pride in providing eggs to Coloradans. We are also proud to offer consumers the choice between cage, cage-free eggs, organic, nutrient enhanced, brown and white eggs.

Retail store fronts have been awash in shades of pink and red since mid January, stocked to the hilt with heart shaped candy boxes and long stem red roses. Valentine’s day is a time when we open our hearts and celebrate our love and affection for one another. No matter how expensive or lavish our gifts of affection are, however, the real question is whether or not our hearts will stay healthy enough to live long after the flowers and chocolate are gone. In honor of Valentine’s Day and National Heart Month, the Colorado Egg Producers (CEP) Association wants you to take this February to reflect about one’s heart and make a conscious decision to keep it healthy.

“As local egg farmers, we have long emphasized the functional and nutritional values of eggs,” said Mike O’Connor, a Colorado egg farmer and member of the CEP. “New research and dietary guidelines reinforce this, showing that eggs are an important part of a low calorie, nutrient dense and balanced diet.”

Colorado Egg Farmers Help the Easter Bunny and Donate Nearly 325,000 Eggs to Area Food Banks

Colorado egg farmers are proud to help the Easter Bunny out this year. The seven local farms that make up the Colorado Egg Producers (CEP) Association have donated nearly 325,000 eggs to food banks throughout Colorado to ensure those in need will have eggs in time for Easter. Of the total number of eggs, 140,000 were given to Food Bank of the Rockies in Denver on Thursday, April 1st at 10:00 a.m.

The Easter Bunny made a special appearance at Food Bank of the Rockies event today, entertaining children and partner agencies who came to pick up their Easter eggs. The CEP team cooked and served free omelets to all the families, guests and organizations in attendance.

“The Colorado Egg Producers Association is thrilled to be involved with such a truly great event,” said Jerry Wilkins of the Colorado Egg Producers. “As egg farmers, we feel it is important for us to provide eggs to those in need, especially during these tough economic times. Every Colorado family deserves to have eggs for the Easter holiday.”

Eggs are Now Naturally Lower in Cholesterol

A new study shows large eggs are 14 percent lower in cholesterol and 64 percent higher in vitamin D. The United States Department of Agriculture's Agricultural Research Service (USDA-ARS) recently reviewed the nutrient composition of standard large eggs, and results show the average amount of cholesterol in one large egg is 185 mg, 14 percent lower than previously recorded. The analysis also revealed that large eggs now contain 41 IU of vitamin D, an increase of 64 percent.

Enjoying an egg a day can fall within current cholesterol guidelines, particularly if individuals opt for low-cholesterol foods throughout the day. The 2010 Dietary Guidelines for Americans suggest that eating one whole egg per day does not result in increased blood cholesterol levels and recommend that individuals consume, on average, less than 300 mg of cholesterol per day.
