Egg, Veggie and Cheddar Toast Cups

Butter flavored cooking spray
6 large eggs
3/4 cup skim milk
2 1/2 tablespoons Dijon mustard
1/4 teaspoon ground black pepper
1 teaspoon olive oil
2 slices Canadian bacon, finely diced
1 cup kale mix
1/3 cup sliced grape tomatoes
1/2 cup sharp cheddar cheese


Preheat oven to 375 degrees Fahrenheit and generously spray a 12-cup muffin tin with cooking spray.

Whisk eggs, milk, mustard and black pepper in a large bowl until blended; set aside. Heat olive oil in a skillet over medium-high heat.

Add Canadian bacon, onion, kale mix and tomatoes and cook 5-7 minutes until the bacon and onions have browned and the greens have wilted; stir into egg mixture.
