Philly-Style Garlicky Greens and Egg Sandwich

Ingredients

Kosher salt
1 1/2 pounds broccoli rabe
3 tablespoons extra-virgin olive oil
4 garlic cloves, finely chopped
Freshly ground black pepper
5 to 6 tablespoons unsalted butter
4 9-inch hero rolls, split
8 ounces sliced provolone
3 tablespoons Sriracha hot sauce, or to taste
4 to 8 large eggs
2 tablespoons grated Parmesan

Instructions

Preheat broiler to high with a rack set 4 inches from the heat source. Bring a large pot of salted water to boil.

To cook the greens, add the broccoli rabe to the water and cook until crisp tender, 3 to 4 minutes, then drain. Heat the oil in a large frying pan over medium-high heat until hot. Add the garli and cook, stirring, until golden, 1 to 2 minutes. Stir in the broccoli rabe, season with salt and pepper, remove from heat and keep warm.
