Banana Crunch Bread
Time to celebrate those brown bananas sitting on your counter with this back-to-school recipe!
For the bread:
3 large ripe bananas
3 eggs
½ cup buttermilk
2 tsp vanilla extract
½ cup oil
2/3 cup sugar
2 cups walnuts, ground fine and ½ cup reserved for topping
1 ½ cup all-purpose flour
1 tsp salt
1 tsp cinnamon
2 tsp baking powder
For the topping:
½ cup walnuts ground fine
2 tbsp brown sugar
2 tbsp flour
4 tbsp cold butter, cubed
Directions:
Mash bananas in a large bowl. Add eggs, buttermilk, vanilla, sugar and oil into the bananas. Whisk well until fully combined. In another bowl, combine 1½ cups of the ground walnuts, flour, salt, cinnamon and baking powder. Stir together. Slowly add the dry ingredients into the wet ingredients and stir until just combined. Line a loaf pan with parchment paper and pour bread batter into the loaf pan. Set it aside. In a food processor, pulse the topping ingredients together until coarse crumbs form. Top the batter with the crumb topping. Bake at 350 degrees for 60 to 75 minutes until a toothpick comes out clean. Let cool, then slice!
