Lunchbox Protein Dip

Picky eater? No problem! Pack in some extra protein to make those hangry tummies happy again!

 

2 hardboiled eggs 

1/2 cup cooked beans (mayocoba or white beans)

2 tbsp lemon fresh juice 

3 tbsp olive oil 

2 tsp ranch seasoning 

Freshly ground pepper 

 

Put all ingredients into a blender or food processor. Blend until smooth. Keep cold over an ice pack for lunchboxes. Serve with fresh veggies or rice crackers.
