Citrus Olive Oil Cake
A delicate blend of citrus and olive oil, this cake is a breakfast treat with tea or after dinner delight with ice cream!

4 eggs
1/2 cup EVOO
2 tsp lemon extract
3/4 cup sugar
Juice of one orange
1 3/4 cups of flour
1 tsp of salt
1 tsp baking powder
Powder sugar

Whisk eggs with extra version, olive oil, lemon extract, sugar, and orange juice. Sift in flour, baking powder, and salt. Gently fold the mixture together. Pour into a parchment paper lined springform pan. Bake 350° for 35 to 40 minutes. Let cool, then remove from baking pan. Dust with powdered sugar.
