On-The-Go Eggs

Ingredients:

Non-stick cooking spray

1 dozen eggs

1/4 cup milk

2 cups total of any 2-3 omelet type ingredients of your choice (Suggestions: bell peppers, diced ham, mushrooms, spinach, bacon bits, broccoli, tomato)

Optional: tortillas, cheese, salsa if making breakfast burritos

 

Directions:

Pre-heat oven to 350 degrees. Spray a layer of non-stick cooking spray into a 13x9 pan. Add a layer of frozen O’Brien potatoes in the pan. Bake for 10-15 minutes to thaw the potatoes. Meanwhile, whisk a dozen eggs and 1/4 C milk together. Prepare 2-3 other ingredients to add, about 2 cups total. Bake for approximately 45 min, or until eggs are no longer runny. Let it cool, and then cut into squares and store in refrigerator. Reheat in the microwave. Add salsa or cheese and enjoy a quick and healthy breakfast. Consider chopping up the serving to fill a tortilla for a healthy, quick breakfast burrito. Change the ingredients each week for a variety of on-the-go eggs each week!
