Peanut Butter Fudge Bars

We have found the answer to happiness with these fudge bars. They are by far the most luxurious bite of gluten free goodness that we’ve ever had!

 

8 eggs

3 cups chocolate chips

1 cup sugar

Vanilla extract

2 sticks butter

1 cup creamy peanut butter

3 tbsp powdered sugar

 

Directions:

Melt butter sticks and 2 cups of chocolate chips together. Stir together until smooth and let cool. Whisk 8 eggs into the chocolate mixture. Once fully combined, add in a cup of sugar and a teaspoon of vanilla extract and whisk. Pour batter into a 9×13 cake sheet pan. Bake at 350 degrees for 40 minutes until just set. Let cool then cover overnight or cool for several hours. Melt one cup of peanut butter until smooth and creamy. Add in powdered sugar and a dash of vanilla extract. Spread peanut butter mixture over the cooled fudge bars. Next, melt a cup of chocolate chips with a teaspoon of coconut oil. Pour chocolate and spread over the peanut butter mixture. Keep in refrigerator to cool, then slice.
