Spring Quiche

Bright, light and full of good stuff! Our crustless quiche can be the centerpiece of your spring brunch.

8 eggs
1 cup diced ham
¼ cup finely chopped green onions
2 cups swiss or gruyere cheese, shredded
2 cups half and half
5 sprigs fresh thyme, roughly chopped
Salt/Pepper to taste
2 cups arugula
Drizzle of olive oil and lemon juice

Whisk together eggs, cream, thyme, salt and pepper. Line a 9” spring foam pan with parchment paper. Layer diced ham and green onions on the bottom, then cheese. Pour egg mixture over the ingredients. Bake at 375 degrees for 45 minutes until the quiche is just set. Remove quiche from parchment paper and place on a serving platter. Let cool for 10 minutes. Toss arugula with lemon juice and olive oil and place over quiche. Slice and serve.
