Summer Fruit Tart

One of the best ways to enjoy fresh summertime fruit, this pastry is both a breakfast and dessert staple in our house when farmers market fruit is plentiful. You are only 6 ingredients away from a simple sweet treat!

1 puff pastry thawed and slightly rolled out
1 egg
10 strawberries, halved
5 plums or small nectarines, sliced
Sugar
Lemon juice

Prepare your puff pastry. Lay pastry on parchment paper and place on a baking sheet. With a knife, make a slight indent one inch in on each side of your pastry to create a crust. Make a quick egg wash and brush entire pastry with egg wash. Place sliced strawberries and plums or peaches into your bowl. Sprinkle fruit with a heaping tablespoon of white sugar. Squeeze half of a lemon over the fruit as well and toss together with sugar. Lay fruit onto the pastry, leaving the border empty. The sides will puff up during baking to create a crust. Bake at 415 degrees for 25 minutes until the pastry is golden brown and the fruit is slightly caramelized on top. Serve with fresh whipped cream.
