Mini French Toasts To Go
For those school morning when everyone is running a little late: These on-the-go French toasts are so convenient! Pull one out of the freezer and after a few minutes toasting in the air fryer, the kids have a hot breakfast to enjoy before heading out the door (or take it to-go in the car!)
8 mini croissants
8 eggs
1 cup cream
3 tbsp sugar
1 tbsp vanilla extract
¾ cup berry jam
Parchment paper
Muffin tin
Directions:
Spray your muffin tin with cooking spray, then line the bottom of the muffin tin with a circle of parchment paper. You’ll need to cut circles to fit the muffin tin bottom. This prevents the mini French toasts from sticking. Roughly break up the croissants into small pieces and divide them into the 12 muffin tin cups. Make an indent in the center of each one and add in a teaspoon of jam. In a bowl, whisk together eggs, cream, sugar and vanilla. Slowly pour mixture over each muffin cup, letting the egg mixture soak into the croissant pieces. Bake at 375 degrees for 20 to 30 minutes until the French toasts are cooked through and crispy on top. Eat or freeze for later use. This recipe makes 12 mini French toasts.
