DIY Egg Cups

Eggs for dinner are hard to beat! Quick and easy, this idea is new to our family and it’s a good one! In our house, there are make your own pizza nights, DIY taco nights and now build your own EGG cup nights. My kids love to experiment in the kitchen and so “make your own egg cup” night was an easy sell. This idea might just be the most budget friendly dinner that refrigerator staples can make!

Things you’ll need:

Cooking Spray

Eggs

Muffin tin, Popover tin, pastry tin or brownie bites pan

Various fillings like:

Green chili

Cheeses (feta cheese, shredded cheddar, parmesan)

Diced cooked potatoes

Fresh herbs

Cottage cheese

Chopped Veggies

Green onions

Chili Oil

Bruschetta

Sausage or Bacon Crumbles

Heavy Cream

Salt/Pepper

Start by giving your pan a good spray. Crack an egg into each slot. Top each egg with different toppings and a dash of heavy cream. Sprinkle with herbs, salt, pepper. Bake at 375 degrees for 20 minutes until eggs are cooked to your liking. Hint: the leftovers make a darn good breakfast too!
