Tomato Ring Omelets
Heading to catch the last few days of the stock show? Whip up this easy breakfast before you head out the door!
1 egg
1 tbsp cream
Pinch of salt pepper
1 tbsp chopped green onion, mushroom, or bell peppers
1 large beefsteak tomato or 2 smaller vine ripened tomatoes
Shredded cheese for sprinkling
Directions:
Whisk together the egg, cream, salt, pepper. Slice tomato and clean out center, creating a tomato ring. In your frying pan, melt a tablespoon of butter over medium to low heat. Place tomato rings on pan and fill each ring with your onion/veggies. Let the onion cook for a minute. Pour egg mixture into each ring and cover your pan. Let the egg cook for a minute. Once the egg is almost done, sprinkle cheese on the top of each tomato egg filled ring and close pan again. Allow cheese to melt. Makes 3 large rings or 6 smaller ones. Enjoy warm!
