Sunshine Cake
As pretty as the sunshine, the color of this cake alone will put a smile on your face. Then, after your first bite, you’ll know why we call it “sunshine cake”. Summer isn’t over just yet, and this cake allows you to soak up all last bits of of those warm days in just one slice.
1 box pineapple flavored cake mix
1 cup flour
1 tsp baking soda
4 eggs
1 orange, juice and rind + 1 cup orange juice
1 stick butter, melted
1 cup sour cream
1 tsp vanilla extract
In a bowl, combine dry ingredients. In another bowl, whisk together all other ingredients. Add dry ingredients to wet ingredients and whisk together until combined. Pour batter into a greased bundt pan. Bake at 350 degrees for 40 minutes or until a toothpick comes out clean. Let cool, then top with vanilla frosting or a simple cream cheese icing.
