Classic Coffee Cake
A family recipe passed down through the generations. But shhh here’s a secret, we added an extra egg to give the cake a little more fluff!
Cake:
1 cup butter, melted
1 ½ cup sugar
3 eggs
1 cup sour cream
1 tsp vanilla extract
2 cups flour, sifted
1 tsp baking powder
½ tsp salt
Topping:
½ cup toasted walnuts, finely chopped
1 tbsp brown sugar
1 tsp cinnamon
Cream butter and sugar together in a large bowl. Whisk in eggs, one at a time. Fold in sour cream and vanilla. Sift in the flour, baking powder and salt. Batter will be thick. In another small bowl, mix together walnuts, brown sugar and cinnamon. Pour half the batter in a prepared angel food cake pan. Top half of batter with half of the walnut mix. Spoon over the rest of the batter, and top with remaining walnut mix. Bake at 350 degrees for an hour until a toothpick comes out clean. Let cool, then serve.
