Moroccan Spiced Tomato Eggs
Heart healthy and full of bold flavors, this recipe will take your tastebuds on a safari!
3 large tomatoes off the vine, roughly diced
2 tsp ras el hanout spice
Small drizzle olive oil
2-3 eggs
Bunch of cilantro or mint
In a small oven proof skillet, gently combine diced tomatoes, spice and olive oil. Crack eggs over the tomatoes. Bake at 350 degrees for 20 minutes or until the eggs are done to your liking and the tomatoes are roasted. Garnish with a good amount of fresh cilantro or fresh mint. Serve on multigrain toast or enjoy by itself.
