Potato Chip Omelet

Whether you’re mixing up a mocktail or sipping on champagne, our potato chip omelet is the perfect late night (or early morning) snack on NYE! 

4 eggs

1/2 cup diced ham

1/4 cup cilantro or parsley 

1/4 cup diced onion

1 cup broken up potato chips 

Place ham, cilantro and onions into a small, greased skillet. Top with potato chips. Whisk eggs together with salt and pepper. Pour eggs over potato chips making sure the chips are coated in the eggs. Bake at 400 degrees for 20-25 minutes until the chips are golden brown. Let cool for a few minutes, then slice.
