Chili Oil Fried Eggs
Winner winner eggs for dinner! Say hello to chili oil fried eggs over a bed of beans. Mop it up with a buttery piece of toast – so good.
Eggs
2 cans of beans
1 onion
Chili Crisp Oil
Toast
Lemon wedges
In a large pan, fry a diced onion in olive oil, add in two cans of beans (plus the liquid), salt/pepper. Stir, cover and cook on low for 20 minutes. Mash up the beans until slightly smooth. In another frying pan, heat chili crisp oil and fry eggs to your liking. Top beans with eggs and a generous squeeze of lemon! Grab your favorite toast and dunk away.
