Irish Coffee Chocolate Cake
The only thing better than a true Irish coffee? A chocolate Irish coffee cake! The coffee + whiskey combo really makes this cake unique. When those rich notes in the cake meet the fluffy chocolate whipped cream, you know this cake truly has it all. Happy St. Patrick’s Day!
1 cup strong coffee
1 box chocolate cake mix
1 box chocolate jello pudding mix
4 eggs
½ cup oil
1 tub cool whip whipped cream
1 tub chocolate frosting
1 can condensed milk
2 ounces Irish whiskey (any whiskey works!)
Directions:
Whisk cake mix, pudding mix, coffee, oil and eggs together. Pour batter into a round springform cake pan. Bake the cake at 350 for 40 minutes until cake is done. Let cool for 10 minutes. Poke holes in cake with the back of a wooden spoon. Set cake aside. Slowly stir condensed milk and whiskey together. Pour the whiskey cream mixture over the cake holes. Let the cake cool completely. Using a hand mixer, slowly blend whipped cream and chocolate frosting together until combined. Frost cake with chocolate cream. Stores best in the refrigerator after a day.
