Irish Coffee Chocolate TorteÂ
1 cup sugarÂ
1 stick butter, meltedÂ
2 eggsÂ
2 tsp vanilla extractÂ
1/2 cup coffee liqueurÂ
1/2 cup sour creamÂ
3/4 cup cocoa powder
1 cup almond flourÂ
1/4 cup flourÂ
1/2 tsp saltÂ
2 tsp baking powderÂ
Whisk butter and sugar together in a large bowl. Add in eggs and vanilla extract, whisk until combined. Fold in coffee liqueur and sour cream. In another bowl, stir cocoa powder, almond flour, and your regular flour together. Add in the salt and baking powder. Add the dry ingredients to the wet ingredients. Mix well until the cake batter forms. Pour batter into a prepared cake pan. Bake at 350° for 30 minutes, or until a toothpick comes out clean from the center of the cake. Let the cake cool completely before adding the whipped cream topping.
For the whipped cream topping: place one cup of very cold heavy whipping cream into a bowl. Add in 1 tablespoon of powdered sugar and 1 teaspoon vanilla extract. Using an electric mixer, beat the whipped cream until soft peaks form. Fold in 2 tablespoons of Irish cream.Â
