The After School Graze Plate:

Filled with goodies from the refrigerator and the pantry, we created this graze plate with protein, fiber and a semi-sweet treat. Protein ideas: hardboiled eggs with toppings like lemon pepper and everything bagel seasoning, cheese slices and nuts. Fiber ideas: raw fruit and veggies of your kid’s choice. Sweet treat: a homemade mom approved baked good treat (see our recipe below!)

 

Vitamin C Cake

This light citrus loaf cake makes a great after school snack. Packed with natural Vitamin C and protein from eggs, it’s a mom-approved baked good to keep those after school munchies at bay till dinner time!

 

4 eggs

½ cup olive oil

1 tsp vanilla extract

Juice and zest of 3 to 4 clementines

¾ cup white sugar

½ cup plain yogurt

2 cups flour

1 ½ tsp baking soda

Pinch of salt

 

Directions:

In a large bowl, whisk together eggs, olive oil, vanilla, sugar, yogurt, clementine juice and zest. Set it aside. In another bowl, sift flour, baking soda and salt together. Slowly add the dry ingredients to the wet ingredients and stir together until just combined. Pour batter into a loaf pan lined with parchment paper. Bake at 350 degrees for 45 minutes until a toothpick comes out clean.
