Peanut Butter Blossoms
The classic cookie we all know and love makes a much needed appearance on our Christmas cookie plate! This time, it’s gluten free, but not free of flavor!
½ cup creamy peanut butter
1 stick butter, softened
½ cup brown sugar
¼ cup white sugar, plus more for rolling
2 eggs
1 teaspoon vanilla extract
1 ½ cups gluten free flour
1 tsp baking powder
½ tsp salt
Hershey kisses
Directions:
Cream peanut butter and butter together in a large bowl. Add in sugars and mix well. Whisk in eggs and vanilla. Sift in flour, baking powder and salt. Stir together until dough forms. Roll a small ball of dough and swirl it around in white sugar. Place cookie dough balls on a parchment lined baking sheet. Bake at 375 degrees for 8 minutes. Remove from oven and place a Hershey kiss in the center of the cookie, pressing down so it’s secured. Place cookies back in the oven for another minute. Remove and let cool.
