Simple Cherry Cobbler

Making the most of fresh cherry season with an easy cobbler!

2 lbs cherries, pitted
½ cup sugar
1 tsp almond extract
1 cup flour (we used gf flour)
1 tsp baking powder
¼ tsp salt
¾ cup milk
2 eggs
1 stick cold butter, cubed
1 tsp vanilla extract

Directions:

Preheat your oven to 350 degrees. In a large bowl, mix cherries with sugar and almond extract. Pour cherries into a large oven proof skillet or baking dish. In another bowl, combine flour, salt and baking powder. Using a pastry cutter, mix in the cold butter cubes until coarse crumbs form. Add in milk, eggs and vanilla. Stir until a thick batter forms. Spoon batter over the cherries. Bake for 45 minutes to an hour until the cherries are bubbling and the cobbler topping is golden brown. Serve warm with vanilla ice cream.
