Candy Cookies

An easy way to use up your leftover Halloween chocolate to make cookies worthy of your Christmas dessert plate!

2 cups creamy peanut butter, melted
1/4 cup olive oil
2 tbsp light corn syrup
4 eggs
3/4 cup brown sugar
1 tbsp vanilla extract
About 3 cups rolled oats
2 tsp baking powder
2 cups various chocolate bars and chocolate candies, chopped up

Directions:
Whisk together melted peanut butter, olive oil, corn syrup, sugar, eggs and vanilla extract until smooth. Add in oats (one cup at a time, adding more or less as needed) and baking powder. Stir together. Fold in chopped chocolates. Spoon large scoops onto a parchment lined baking sheet. Bake at 375 degrees for about 10 to 12 minutes until cookies are golden brown and toasty on top. Let cool on cookie sheet before removing with a spatula. Note: These freeze very well!
