Asparagus Eggs

Our last summer sheet pan meal features everything that is good for you! Get all your daily vitamins from eggs and greens in one dish. Colorful and easy to assemble, we have a feeling this will become a weekly go-to for any meal of the day.

 

1 to 2 bunches of asparagus, ends trimmed and shaved with a carrot peeler

Olive oil

Salt, Pepper

Seasonings of Choice like lemon pepper, old bay, garlic – we used green goddess sprinkle

6-8 Eggs

Handful of Shaved Parmesan or Feta Cheese

 

Directions:

Preheat oven to 400 degrees. Place cleaned asparagus on a sheet pan. Drizzle with olive oil and your preferred seasonings, using salt and pepper to taste. Toss asparagus around ensuring they are lined up again flat on the sheet pan. Roast for 10-12 minutes until asparagus is tender. Crack eggs on different places of asparagus. Return sheet pan to oven for another 10 minutes until eggs are cooked to your liking. Sprinkle with cheese. Best served by taking a spatula and dishing out a layer of asparagus with that egg on top!
