Red Pepper & Feta Cheese Casserole

Oh, this one is too good! The creaminess of the cottage cheese + the sharp feta flavor gives you a can’t beat casserole. Add in some garden favorites and dinner is served!

20 ounces cottage cheese

4 eggs

1 red bell pepper diced small

1 1/2 cups basil or spinach, roughly chopped

1 cup feta cheese crumbles


1 tsp garlic powder

1 tsp paprika powder

1 cup butter round cracker crumbs


In a greased casserole dish, pour in cottage cheese and eggs. Season with salt and pepper and whisk around mixture until well combined. Add in diced red bell pepper, spinach or basil, and feta cheese. Stir mixture with a spoon. Sprinkle over garlic powder and paprika and gently mix into the cottage cheese mixture. Top with cracker crumbs. Bake at 375 degrees for 40-45 minutes until cracker crumbs are toasty and casserole is bubbling. Serve with warm pita bread or just by itself!
