Campfire custard!
For when you’re craving a sweet (but lighter) treat while sitting around that cool summertime evening bonfire 🌠

1 small sweet potato (cooked)
1 egg
1/4 cup cottage cheese
1 tsp vanilla extract

Place ingredients in a blender. Blend until smooth. Pour mixture into a small ramekin. Place that ramekin in a baking dish filled halfway with water. Bake at 350 degrees for 40 minutes. Let cool. Enjoy by itself or top with whipped coconut cream and cinnamon.
