Green Eggs and (Crispy) Ham

No convincing needed from Sam I Am. These green eggs and ham are the jam! Use up that Easter ham to make this storybook meal a reality.

1 egg
1 piece hearty bread, toasted and buttered
3 tablespoons fresh pesto
½ cup ham, diced small
Butter

Melt a tablespoon of butter in a frying pan until it’s sizzling. Sauté ham on high heat until crispy. Remove from pan. Turn down the heat and spoon pesto into your pan. When pesto is sizzling on the sides, crack an egg into the pesto, carefully making sure the egg whites seep into the pesto and the yolk remains full. Once the egg is cooked to your liking, remove from heat, and carefully transfer the pesto egg to your toast. Top with crispy ham.
