Chocolate Chip Peanut Butter Banana Bars

Finally! Another recipe to use up those extra ripe bananas that are browning away on your countertop. These grain free breakfast cookie bars have it all. They won’t even last a day in the house, so be sure to hide a piece for yourself!

2 eggs
2 ripe bananas
½ cup creamy peanut butter, melted
2 tsp vanilla extract
½ cup almond flour
½ tsp baking soda
½ cup chocolate chips + a handful for topping
Flake salt

Preheat oven to 350 degrees. Mash bananas in a big bowl. Add in eggs, peanut butter, vanilla extract, almond flour and baking soda. Whisk until smooth. Fold in chocolate chips. Pour batter into a parchment lined 8x8 baking pan. Top with a handful of chocolate chips and flake salt. Bake for 20-25 minutes. Store any leftovers in the refrigerator.
