Sheet Pan Season is here!

Whether it's a cookout, camping trip, or simply keeping up with the kids out of school... grab that extra dozen of eggs because baking in bulk is what summer is all about! Over the next several weeks, we'll be featuring some easy sheet pan recipes to feed a crowd. First up, Colleen's Camping Cookies.

Sheet Pan Camping Cookies

A cross between a granola bar and a monster cookie, these treats make for a hearty after-hike snack or a basic breakfast on the campground. Loaded with protein and fiber (plus some chocolate!), you’ll want a batch of these in the freezer all summer long to keep little bellies happy and full.

3 cups oats

1 cup creamy peanut butter, melted

½ cup white sugar

½ cup brown sugar packed

1 stick butter, softened

2 tsp baking soda

1 tbsp vanilla

4 eggs

1 cup M&Ms

1 cup chocolate chips + a handful

Sea salt for sprinkling

Directions:

Combine all ingredients in one bowl. Mix well until fully combined. Line 9x13 sheet pan with parchment paper. Spread dough evenly on baking sheet. Bake at 350 degrees for 25 minutes. Remove from oven and top with handful of chocolate chips. As they melt, spread the chocolate into a layer over the cookies. Sprinkle over sea salt. Let cool overnight before slicing.
