Toasted Walnut Cranberry Orange Bread

Let’s talk hostess gifts for the holidays. You can’t show up empty handed, so give a gift from the heart. My toasted walnut orange cranberry bread is the perfect addition to a thanksgiving tablescape or your host is sure to enjoy it the next morning with a strong cup of coffee. Homemade and from the heart - is there anything eggs can’t do?

3 eggs
2/3 cup oil
2 tsp vanilla extract
1 orange, rind and juice
1 cup sugar
1 cup sour cream
3 cups flour
1/2 tsp salt
1 1/2 tsp baking soda
1 1/2 cup fresh cranberries
1 cup toasted walnuts

Directions:
Whisk together eggs, oil, vanilla extract, juice and rind of orange, sugar and sour cream. Sift in the flour, salt and baking soda. Stir together until just combined. Fold in cranberries and walnuts. Pour batter into a parchment lined bread pan. Top with a handful of cranberries and sprinkle of raw sugar. Bake at 375 for an hour to 75 minutes until a toothpick comes out clean. Remove from baking pan. Let cool, then wrap up for gifting!
