Savory Protein Bites
These little bites check all the boxes for back to school. Breakfast, lunchbox, after school snack, (even an after-work nibble to enjoy with your glass of wine). Let eggs fuel your back-to-school season!
1 cup full fat cottage cheese
4 eggs
Salt and pepper
Optional: various add ins like diced ham, crumbled sausage, extra cheese
Directions:
Place cottage cheese and eggs in a blender, with a dash of salt and freshly ground pepper. Blend until smooth. If using add ins, place them into the muffin tin. Pour mixture into a greased mini muffin baking tray. Bake at 350 degrees for 18 to 20 minutes. Let cool, then remove from baking tray. If packing for a lunchbox, keep bites cold over an ice pack.
