We’re calling it now – this is THE spread of summer!

1 1/2 cup frozen peas, cooked and cooled

2 hard boiled eggs, peeled and cold

2 garlic cloves

1/2 cup grated parmesan 

1/3 cup olive oil + more if needed

juice of half a lemon 

handful of fresh basil 

salt to taste 

 

Place ingredients in a food processor. Pulse, then blend, adding more olive oil if needed. Salt to taste. Serve on crispy toast with fresh tomatoes and a sprinkle of flake salt.
