Lemon Ricotta Loaf

4 eggs

1/2 cup ricotta cheese

1/2 cup sour cream

1 cup sugar

3/4 cup oil

2 tbsp lemon extract

2 tsp vanilla extract

Juice and rind of one lemon

1 1/2 cup flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt 

 

Whisk the first 8 ingredients together. Sift in the dry ingredients and mix until batter forms. Pour batter into a prepared loaf pan. Bake at 350 degrees for 45 minutes or until a toothpick comes out clean. Let cool, then top with icing and slice.
